Depending on your personal preference, and abilities. I found rolling High-Build DuraTex was much easier than spraying, and I liked the results.
That said, I would say get 2 gallons. One should be enough, but get an extra for mistakes, waste, the rest of the cabinets you are going to build!

I don't know how much it would take for your cabs, but I have rolled both the high-build and the roller-grade stuff, and I got better results from the roller grade. I have also spoken with the folks at Acrytech, and they told me that if you're rolling, you should use roller grade.

Yeah, the note that rolled on the high-build would leave a sandpaper like texture didn't sound appealing to me.
