In my portable rig, I have several options, CAD suspended/goosenecks (CM100s and CM915). I also have some large diaphragm condensers with variable pattern, and I can get Crown CM30s if I need pencil hypers. I also have six Unidyne III (SM-57) which work pretty well on smaller groups.

In new installations, I tend to spec Audix Microbooms wherever I can, for their great sound and flexibility. If the installation requires suspended mics, I like the Audix too, but often end up with Shures or AT for price.

IOW... whatever I get. 8)

The reason I was asking is I have seen a few production companies using C568s for choirs in an attempt to combat feedback. The only problem is they have such a tight pattern that they need to be moved away from the choir to get any kind of coverage, thus requiring more gain.

I've been using some cheap SE Mics, the SE1 in particular with good results. In the past, I've tried C451, SM81, C460 and even the large diaphragm C414, but the SE1 mics seem to hold their own in this application. If they get rained on, knocked over, caught in a sandstorm, etc, it's not that big a loss.

I agree on the SM57. With a good preamp they perform surprisingly well for a dynamic and have better off-axis rejection compared to many condensers.
