I know I am probably starting to sound like a shill for the EZ stuff, but they have a nice cutting table that will hold a full sheet of plywood and is built on a 24x48" sheet of 3/4 ply. I picked up the kit used and I like it a lot.
The sacrificial boards in the center slide into the plastic slots, the boards on the ends both slide and swivel. It packs down to 24x48" but supports an entire sheet of ply. After you rip your ply down, you can slide in the boards and use the table for smaller cuts without taking up shop space. I didn't put legs on mine, I just set it on sawhorses.
This link goes to the entire table, just so you can see how it looks. It would be pricey and stupid to buy the entire thing. You can buy the kit with just the plastic bits and the necessary screws then buy your own lumber. I used the cheapest 3/4" ply I could find for my sacrificial pieces instead of 1x6 boards.
