I only mention this because of all the awesome DIY lighting stuff you've done... You could also DIY some condenser mics. Ultra cost effective too. Great option for non-handled install applications.

I've seen kits for large diaphragm condenser, but there may be some for small ones too.......but, at the price for pencil condensers, it's not as feasible as building a clone of a U87 or something like that.

I was in high school (early 90's) the last time I assembled some. Simply dangled from above, we used them to mic the stage for our musical production that year, "Guy's and Doll's".
If you have drop ceilings or some other way to drop a couple from the ceiling over the choir and another over the piano, they're visually unobtrusive and it would reduce trip hazard too. Would be plenty to do what you need.
Condenser mic pickup elements can be had for less than a dollar each in small quantities. IIRC, add a resister, a male XLR connector, and a little wire and it's done. Less than a few bucks each and they don't sound poorly at all. I don't recall the resistor values and there may also have been a capacitor too. Would have to do a little research to be sure. All inexpensive stuff though.
