Wondering if anyone hereis using the Behringer EPX2000 or EPX3000 in their rigs.
If so would love to hear configurations/loads and types of boxes driven and their thoughts on performance etc.

No, but I am using a couple of Behringer EP2500's that work as advertised.
If the EPX2000/3000 are anything similar to the EP2500 series, I say go for it.
If the EPX2000/3000 are anything similar to the EP2500 series, I say go for it.

I researched the epx just prior to my last amp purchase a month ago. In the end , they looked awesome, switching ps, and I have no reason to believe they arent as they appear (inside). However, shipping a pallet of amps back if they were not is not cool so like Zack I went with the reliable and proven (to me) ep series. I actually bought 2000s and 4000s (not 1500 and 2500) as I found them to be nearly identical except for a very slightly higher power supply output..
