How much (or little) voltage did you end up putting to the DRs?

1 + 2 = 3 seconds
3 x 60 (vid length) = 180
180/60 = 3
Three minutes to set up the whole thing? (once the parts were put in location?)

Didn't measure. but I guess I was hovering under 50% of the cabs potential.

I don't follow your math.
This vid. is after rendering so the frame per second rate isn't standard.
The original shot was 1:30h long and consisted of 1800 frames...

Hah! Okay! You do understand ......and I was wrong. (In your YT comments you said that there was a 2 second interval between frames, and the vid was 60 seconds long) No matter.

How well did the LabSubs keep up with the DR290s? Or were they just there for pattern control rather than sheer volume?

The LABs are true beasts at the low end, as well as in size and weight...
In most of my gigs (light rock, folk and contemporary music) my two LABs keep up very nicely with 4 DR290s.
The ratio is of coarse material dependant but I would say for general purpose/rock/dance music one LAB is compatible to 1 to 1.5 DR290.
