You can use the tape 2 monitor on the receiver (if you have it). Tape 2 out to box inputs, box outputs to tape 2 inputs. Enable tape 2 monitor on receiver.
Looks like this will work with the Yamaha receiver I have.

Maybe a silly question but why do the OTB plans call for two speakon jacks to be installed on the cabinet?

In and out so you can daisy chain more cabinets. Also you can wire tops to the 1+/1- connectors and subs to the 2+/2- connectors and no matter which way you daisy chain your cabinets, using 4 conductor speaker cable they will all get the respective signal.
