At least for the side sheathing, I remember a couple well placed ratchet straps can help hold em in place.
Also might try leaving the sheathing in a 5 gallon bucket or similar overnight to get some pre-bend into the wood so you're not fighting it as much when you go to install them.

Good luck on the build, I'll be following along to see how it turns out!
I'm mostly here to agree with Seth that 2x 12" drivers are probably better for your setup.
Also, to confirm my 30" wide T48's weigh about 125ish Pounds.
Thats Baltic birch and a heavy 18Sound driver.

You want to keep the internal volume the same as the plans. I believe it's less critical in a sealed enclosure but I'd do the math to keep it the same. If you raise the top "X" amount bring the back in "Y" to compensate. Too much math for me with the curved baffle, but, Good luck...

A 16" cab uses 15" wide panels, so that buys you a little kerf room, but dont forget about your braces too. I'd say one t30 is close to 2 sheets.
